I change the font color, but it still looks black. Why?

The Accessibility option is probably set to display the font in one particular color on your screen. To change this,

Choose Tools → Options
In the Accessibility window, click OpenOffice
Click Accessibility.
Click on the checkbox to remove the checkmark beside Use automatic font color for screen display
Click OK to close the Accessibility window.
Save the document and re-open it.

The chosen font color should now appear.
