Can I center my text so that the text will flow both to the left and right if the cells are empty?
It is possible in Calc for the text to flow across empty cells on either side of a cell.
At least in OpenOffice.org 3.1 it is possible to enter text in a cell, then click the Align Center Horizontally icon in the Formatting toolbar.
