There are at least two ways to build OOo - one is to just use the sources and the included buildsystem directly (this is explained in Building OpenOffice.org) or to use a system that encapsulates the process and manages some additional patchsets (that system is called ooo-build and using it is explained in Building with ooobuild

There are also some Distribution-specific instructions
