Templates serve a number of purposes ranging from the saving of repetitive effort to enabling easy standardization. For information on how to create a new template see the MediaWiki help on Templates.
Existing Templates
You can use Special:AllPages and set the Namespace to Templates to find a complete list of all Templates in the OpenOffice.org Wiki.
The Documentation project maintains a list of Templates that they use along with descriptions and examples.
